It’s not summer without something cold and icy and this frozen yoghurt is super easy to make, plus it’s healthier than ice cream. Swap out the berries for mango or pineapple, add some toasted coconut – the variations are endless!

Serves: 4 – 6

Ingredients:

  • 125g frozen mixed berries
  • 560g double cream plain yoghurt
  • 4 tablespoons honey
  • 1 punnet fresh raspberries
  • 10 small store-bought meringues

Pulse all the ingredients in a blender until the mixture is combined and creamy. Toss in the fresh raspberries and crush the meringues over the top. Pour into a freezer-proof container and freeze until firm. Remove from the freezer and allow to stand for 10 minutes before serving.
