It isn’t a braai without chargrilled mielies and we’ve fancied these up just a little with a homemade smoky paprika butter, which is so good you’ll be putting it on everything … so best to make a double batch!

Serves: 4 Ingredients:
  • 1 cup butter, room temperature
  • ¼ cup fresh coriander, torn
  • 1 teaspoon smoked paprika
  • 1 clove garlic, crushed
  • Pinch of kosher salt
  • 6 corn on the cob
Mix the butter, salt, garlic and paprika together in a bowl until the butter is smooth and everything is combined. Then tear up the coriander leaves and mix in. Roll the butter in cling wrap to make a cylinder and allow to set in the fridge. Make sure the coals are at a medium heat then place the corn onto the grill, rotating every three to four minutes. Once charred and cooked through, serve immediately with the butter rounds on top and a sprinkling of salt.
